Vivelys — Yeast multiplication monitoring

Vivelys develops yeast multiplier systems (Ecolys) and needed a sensor to monitor their process velocity via density and control fills and empties — integrated directly with their existing automation equipment in wineries.
The challenge: yeast reproduction is a much faster process than alcoholic fermentation, requiring level sampling multiple times per second.
Project milestones:
- December 2024 — project approval
- February 2025 — first prototypes delivered
- May 2025 — first winery trials
- July 2025 — deployment in 5 wineries across France and Hungary
Bellot — Smart hygienic seal monitoring

Bellot (large French wine group) commissioned Komsenso to modernise their hygienic seals (bondes) with internet connectivity and direct mobile notifications.
Objetivos:
- Allow opaque seals and wine light exposure; alert on rising levels to prevent overflow;
- Eliminate periodic visual inspection;
Technical Requirements :
- Rechargeable battery lasting 12 months
- 100% submersible without connectors
- Low cost.
- Resistant to sulphur dioxide;
- Should be integrated into the bonde cap. No wiring or installation in the winery
- Precisión < 1mm

Grupo Yllera — Cold storage fermentation monitoring

Bodegas Yllera stores refrigerated must and ferments year-round, requiring an early warning and monitoring system to identify spontaneous fermentation starts in cold storage tanks.
The challenge: the ice layer (sombrero) that forms on tank tops and walls during cold storage cannot interfere with the sensors.
Solution: a new sensor and algorithm developed specifically for early fermentation detection based on bubble formation.
